<p>Ich möchte den klassischen Karottenkuchen keineswegs verteufeln, ABER ich muss sagen, in Form von Muffins schmeckt es schon um einiges besser. Der Teig ist etwas feiner, als bei einem Karottenkuchen und viel fluffiger. Und der größte Vorteil: Die Muffins sind schon nach 20 Minuten fertig und können so schneller vernascht werden.</p>

<h2>Backen mit Gemüse</h2>
<p>Backen mit Gemüse und Obst ist einfach genial, denn so werden die Backwerke schön saftig und fruchtig. Ja, du hast richtig gelesen, mit Gemüse backen geht nicht nur bei Karotten. Besonders gut zum Backen eignen sich zum Beispiel auch Zucchini, Kürbis, Kartoffeln oder rote Beete. Schokoladenkuchen mit roter Beete schmeckt zum Beispiel super lecker. Keine Sorge, die rote Beete wird man nicht raus schmecken. Sie hilft dem Kuchen nur dabei, richtig schön saftig zu werden. <p>Für die Karotten-Muffins habe ich neben den Karotten noch etwas Orange dazu gegeben. So bekommen die Muffins eine herrlich fruchtige Note. Besonders der Schalenabrieb steckt voller Aromen, die sich ganz wunderbar beim Backen entfalten.</p>

Danach den Ofen auf 170 Grad runterschalten und für weitere 15 Minuten fertig backen.</span></div></li><li id="wprm-recipe-3950-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Nachdem die Karotten-Muffins vollständig abgekühlt sind, kannst du sie entweder mit etwas Puderzucker bestreuen oder mit einem Frischkäse-Frosting. Für das Frischkäse-Frosting den Frischkäse mit Puderzucker und Orangensaft vermischen. Zur Deko kannst du etwas Schalenabrieb einer Orange darüber geben.</span></div></li></ul></div></div>

Zum Portionieren eignet sich perfekt ein Eisportionierer. Die Orange Cranberry Muffins kommen dann für 5 Minuten bei 200 Grad Oberunterhitze in den Ofen und backen im Anschluss bei 170 Grad für weitere 15 Minuten im Backofen.</span></div></li><li id="wprm-recipe-3092-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Am besten lassen sich die Muffins aus der Form oder dem Blech lösen, wenn Ihr es für 10 Minuten etwas abkühlen lasst.</span></div></li><li id="wprm-recipe-3092-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Währenddessen kann das Frosting vorbereitet werden. Dazu den Puderzucker sieben und mit dem Frischkäse und Orangensaft gut verrühren. Sobald die Muffins komplett abgekühlt sind, könnt Ihr mit einem Teelöffel das Frosting darauf verteilen. Zur Deko habe ich kleine Cranberrys halbiert und auf die Muffin Glasur gedrückt. <strong>Tipp</strong>: <em>Alternativ könnt Ihr etwas Orangen Abrieb über das Frosting streuen.</em></span></div></li></ul></div></div>
